ROASTED PEARS WITH LABNEH
Serves 1, Ready in 25 Minutes
If I’m working from home on a cold winter’s morning, this is what gets me up! Sweet roasted pears with raisins, homemade quince jam and labneh is such a simple yet delicious breakfast but can also be a great dessert too.
Labneh is perfect for this but you can always swap it for a thick Greek yoghurt, or similar alternative, if you can’t get ahold of it. You can also add some toasted nuts on here if you like.
INGREDIENTS
1 Pear, thinly sliced
A good pinch of dark brown sugar
1 Tablespoon ground cinnamon
100g Labneh
1 Teaspoon honey
1 Tablespoon homemade quince jam (see recipe here)
1 Teaspoon vanilla bean paste
Small handful of raisins
METHOD
- Heat the oven to 200 degrees (180 degrees fan). 
- Gently massage the brown sugar into both sides of the pear slices and place them on a baking tray. 
- Bake the pear slices in the oven for 20 minutes until roasted. 
- Meanwhile, prepare the rest of the plate. Using a hand-held whisk, whip the labneh until thick like the consistency of whipped cream. 
- Spoon the quince jam on top and sprinkle the raisins and a little cinnamon on top. 
- Place the warm roasted pears on top of everything and drizzle with honey before serving.
