FASULE- ALBANIAN BEANS
Serves 2, Ready in 20 Minutes
Fasule, or groshe as it’s known in some parts of Albania, is a simple and tasty bean dish that’s perfect for a delicious lunch or simple dinner. It’s considered a peasant food in Albania but I think it deserves a moment in the spotlight for being so simple and tasty!
It reminds me of the baked beans we have in the UK and I suppose you could use them in a similar way and serve them on toast too.
INGREDIENTS
1 Onion, finely chopped
1x Tin cannelini beans (400g)
2 Tablespoons tomato puree
200ml Water
Salt & Pepper
Olive oil
METHOD
- In a saucepan, heat a little olive oil and fry the onion until soft. 
- Add the beans and tomato puree, season well and cook for a minute to coat the beans in the paste. 
- Add the water, mix and leave to simmer over a low heat for 10 minutes to cook the beans. 
- Serve while hot along with a chunk of fresh bread to mop up all of the delicious sauce!
