GREEK CHICKEN & LEMON SOUP
Serves 2, Ready in 25 minutes
Fresh lemons
This delicious, simple soup is known as Avgolemono in Greek and you’re going to love it! All you need is 5 ingredients and some salt, pepper and olive oil!
INGREDIENTS
Up to 1 litre of chicken stock
40g rice
4 eggs
1x lemon, juiced
Small handful of dill, chopped
1 teaspoon dried oregano
Salt & Pepper
Olive oil
Chopped parsley to serve
METHOD
- Bring the chicken stock to the boil and add the rice. 
- Turn down the heat and simmer for 20 minutes or so until the rice is soft. 
- While the rice is cooking, beat the eggs, lemon juice and chopped herbs in a bowl. 
- When the rice is ready, quickly whisk the egg mixture into the stock to thicken it up. 
- Season well & squeeze in a little more lemon if you like before serving and topping with some fresh herbs.
