Makes 20 Small Biscuits, Ready in 30 Minutes
These lovely little biscuits are a bit like scones and are the perfect size for a quick bite with a side serving of jam or just by themselves.
You can get creative with flavours for these too! Try dried fruits or make a little well in the middle and add jam too.
INGREDIENTS
2 Eggs
120ml Vegetable Oil
60g Yoghurt
1 Tablespoon vanilla bean paste
7 Tablespoons caster sugar
450g Plain flour
15g Baking powder
METHOD
- Mix the eggs, oil, yoghurt, vanilla and sugar in a bowl until fully combined. 
- In a separate bowl, mix the flour and baking powder to combine. 
- Add the wet ingredients to the dry and mix with a spatula (or your hand) into a smooth dough. 
- Line 2 large baking sheets with baking paper and pre-heat the oven to 180 degrees. 
- Break away small pieces of the dough and gently roll these into little balls (around 1 inch or so in size). 
- Arrange these onto the baking sheets with a little space between each. 
- Place in the oven for 25 minutes until golden brown. 
- Leave to cool completely and enjoy!
